Baba Ghanoush with Tucker’s Natural Four Cheese & Chive crackers
Ingredients
200g (one medium sized) eggplant
- 4 sprigs fresh rosemary
- 2 cloves garlic, peeled and chopped
- 1 teaspoon sea salt
- 80g piece parmesan cheese, grated
- 3 stems coriander leaves, chopped into 2mm strips
- 40g red capsicum, deseeded with stem removed
- 2 spring onions, finely diced
- 200g button mushrooms, finely diced
- 40ml olive oil
- 40g cream cheese
- Tucker’s Natural Four Cheese & Chive gourmet crackers, to serve
Method
Roast the capsicum for approximately 40 minutes at 180C and allow to cool.
- Cut the eggplant in half lengthways and place on foil. Add garlic, black pepper, sea salt and olive oil. Wrap into a parcel, seal and bake in a slow oven (120C) for about two hours or until soft.
- When eggplant is cooked, scoop out the flesh and chop finely.
- Saute the diced spring onion and mushrooms in a little olive oil until liquid is gone from the pan.
- Whip the cream cheese in a food processor until softened, then add all remaining ingredients and process for 30 seconds to combine.
- Transfer to serving dish and serve with Tucker’s Natural Four Cheese & Chive gourmet crackers.
