Baba Ghanoush with Tucker’s Natural Four Cheese & Chive crackers

A popular dish in the Middle East, Baba Ghanoush served withTucker’s Natural Four Cheese & Chive gourmet crackers makes a filling and flavoursome addition to a casual meal.

Ingredients

  • 200g (one medium sized) eggplant

  • 4 sprigs fresh rosemary
  • 2 cloves garlic, peeled and chopped
  • 1 teaspoon sea salt
  • 80g piece parmesan cheese, grated
  • 3 stems coriander leaves, chopped into 2mm strips
  • 40g red capsicum, deseeded with stem removed
  • 2 spring onions, finely diced
  • 200g button mushrooms, finely diced
  • 40ml olive oil
  • 40g cream cheese
  • Tucker’s Natural Four Cheese & Chive gourmet crackers, to serve

Method

  1. Roast the capsicum for approximately 40 minutes at 180C and allow to cool.

  2. Cut the eggplant in half lengthways and place on foil. Add garlic, black pepper, sea salt and olive oil. Wrap into a parcel, seal and bake in a slow oven (120C) for about two hours or until soft.
  3. When eggplant is cooked, scoop out the flesh and chop finely.
  4. Saute the diced spring onion and mushrooms in a little olive oil until liquid is gone from the pan.
  5. Whip the cream cheese in a food processor until softened, then add all remaining ingredients and process for 30 seconds to combine.
  6. Transfer to serving dish and serve with Tucker’s Natural Four Cheese & Chive gourmet crackers.
