Pumpkin Dip with Tucker’s Natural Oatmeal Gourmet Crackers
Ingredients
250g pumpkin, peeled, deseeded and cut into 3cm chunks
- 4 cloves garlic, unpeeled
- 30g smoked almonds
- 100ml olive oil
- 1/4 teaspoon salt flakes
- Tucker’s Natural Oatmeal gourmet crackers, to serve
Method
Place the pumpkin and garlic in a roasting tray and drizzle with a littel olive oil. Roast until just tender and the garlic is light golden in colour, then allow to cool.
- Peel garlic and place it and remaining ingredients in a food processor. Process until very smooth.
- Refrigerate until required, then transfer to a serving dish and serve with Tucker’s Natural Oatmeal gourmet crackers.
